     Filet

Hardware:

cast iron skillet, or grill of your choice.  Just for the 2 minute per side searing.

Ingredients:
1 1/2 inches thick
Kosher or Sea salt
Black pepper

Method:
pre heat oven 400
2 minutes per side on high, use skillet, gas grill, charcoal, electric grill.
Slide in the oven for the desired doneness as follows:

Doneness Temperature Range Oven
Very Rare/rare 120° F to 125° F
4 minutes Medium rare 125° F to 130° F
5-6 minutes Medium 135° F to 140° F
6-7 minutes Medium well 145° F to 150° F
8-9 minutes Well done 160° F and above 10+ minutes Note: 

Notes:
Play with your equipment to get it right and your oven may need to be adjusted.
The trick to a perfect filet is to seare it by what ever means and oven finish to reach your preferred doneness
