     Prime Rib

1 standing rib roast 6 to 12 pounds
4-20 cloves of garlic peeled and thinly sliced
Kosher salt and black pepper

Preheat oven 450

Every half-inch making several rows pierce with a paring knife and stuff one or two garlic slivers Place on a rack in a roasting pan

25 minutes reduce heat to 350 then 16 minutes per pound internal temperature 135 140 for medium rare center rest 15 minutes before carving

5 lb = 1hr/20min
6 lb = 1hr/36min

10 lbs for 2 hours at 325 and 10 more minutes for each additional pound

Onion powder
Layer the spices on the meat in order of the spices


250 degrees
cook to 120 degrees internal temperature

butter
herbs of provence
3.5 to 4 hours
rest 1 hour
butter again
little more herbs of provence
500 degrees
