Baja Breakfast Wrap
3 Cups
Chicken Breast Meat, Cooked and diced
1 ½ Cups
Tomato Salsa
4 Tablespoons
Tabasco
12 Each
Eggs, Beaten
12 Each
Flour Tortillas
1 Cup
Cheddar cheese grated
2 Cups
Guacamole
12 Blanched Green onions whole
Combine the chicken breast meat, salsa and the Tabasco. Sauté until the ingredients are hot and the excess liquid evaporates. Hold warm For each serving ladle 2 ounces of egg into a nonstick omelet pan and cook the egg omelet style until it sets Place the omelet onto a flour tortilla and ladle 2 ounces of the chicken mixture, ½ ounce of cheese and 1 ounce or guacamole down the center of the omelet. Roll the omelet inside the tortilla burrito style.
Tie the burrito with blanched green onion.
