Mexican Steak
1 tablespoon paprika
1 tablespoon chili powder
1/2 tablespoon cumin
1/2 tablespoon oregano
1/2 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper pinch salt
1 ½ - 2 pounds sirloin steak
( I use ribeyes )
Salsa
1 avocado peeled and diced
2 small Roma tomatoes diced
3 tablespoons cilantro freshly chopped
1/2 teaspoon minced garlic
1 teaspoon lime juice salt and pepper to taste
Light a charcoal grill and throw in a little mesquite and/or oak. Grill the steaks the way you like. I do 4 to 5 minutes per side with a 1 1/4 inch thickness on the meat.
Note: Make the salsa in the morning and forget about it until dinner. Season the steak at least an hour in advance of cooking.
If I have to tell you to rest the meat 5 minutes and put the salsa on top...Well I can't help you.
