Pork

     Brined Pork Chops

Ingredients:
2 cups water
1/2 cup kosher salt
1/2 cup brown sugar (granulated sugar will work fine, too)
1 teaspoon black peppercorns
1 tablespoon dried thyme
1 tablespoon dried rosemary
3 cloves garlic minced (3 spooons)
 

Method:
Place all of the above ingredients into a pot on the stove and bring to a boil.
3 to 5 minutes

Directions:
Remove from the stove and let cool about 10 minutes.
3 cups ice cubes
Add the three cups of ice to the pot and let desolve in the pot.

Cover pork chops and marinated for an hour or hour and a half. Plastic air tight bag works fine as well.

Light a charcoal grill and grill for about 7 minutes per side.

Notes:
Chops are 1 1/4 to 1 1/2 inches bone in.
