     Chicken Marsala


5-6 Chicken Thighs slightly pounded thin

1 Cup of Flour
2 Tablespoons of RC's Spice

Combine in a container for dredging

2 Tablespoons Olive Oil Into a skillet large enough to hold the chicken and heated to Medium heat Add the chicken and immediately add 2 Tablespoons of butter broken up and spread around the chicken Cook 3 to 4 minutes per side. Remove and place on a cookie sheet and place in the oven at 170 to stay warm.

Add to skillet 2 Tablespoons Butter
4 Cups of Mushrooms

Cook until the mushrooms are golden brown

Add to skillet 3/4 Cup Sweet Marsala Wine Reduce by half Add to skillet

1 Cup Chicken Broth Cook for 5 more minutes

Add to skillet 2 Tablespoons Butter crumbled and spread around Salt & Pepper to taste Cook 3 more minutes

Plate the chicken and pour the sauce over the top.
