Cornish Hens
2 Cornish Hens, Cut out the backbone, snip off the wing tips, snip the first part of the breast bone in the middle about 3/4 to 1 inch to help flatten the bird.
1 cup extra-virgin olive oil
2 Tbs. Kosher Salt
1 Tbs. Black Pepper
1 Bunch of Cilantro
1 Whole Jalapeno (Seed or not to Seed) juliened enough for the blender
6 Tbs. Chopped Garlic
4 Tbs. Lemon Juice
Mix all of the above ingredients in a blender.
Marinate in a plastic 1 gallon zip lock bag. 1 hour or up to over night
Preheat the oven to 350
Light a charcoal grill wait until the coals are white ash, about 25 to 30 minutes, then add a new partial even layer (1 fresh coal for every 2 to 3 hot coals) of charcoal, throw on the grate and let the new layer of charcoal catch and start to give off a good charcoal smoke, about 5 minutes. Add the hens skin side down cover for 5 minutes. Flip bone side down 10 minutes.
Place the hens on a rimmed cookie sheet (known as a jelly roll pan for all you in the know) bone side down. Pour the remaining marinade over the top and place in the oven for 15 minutes.
Rest 5 minutes.......whatever!
