     Luby's Baked Fish

Cod Loin Filet on the thin end. Halibut is the original.  Really, any white fish works.

Lightly butter, oil or grease a jelly roll pan. Not a must but, helps.

1 Cup Flour (All Purpose works just fine)

Lemon Pepper

Helmans Mayonaise

More Lemon Pepper
Dried Parseley

Water

Preheat oven to 350

Prep the fish by cleaning off excess untrimmed pieces of the fish filets.  Pat dry and lay on butcher paper or aluminum foil.

Grease a rimmed cookie sheet.

Sprinkle both sides with lemon pepper and then coat with flour.

Heavily coat the top of the fish with mayonaise.  More the better.

Season the top with more lemon pepper and the dried parsely.

I put mine in the preheated oven and then reach in and add water to bring the water level to about a quarter to half inch around the fish.

Close the oven door and check in about 20 minute and don't let it go more than 25 minutes.
