     Beef Tenderloin with Mushrooms

1 pound beef tenderloin cut into 1/2 inch by 1 inch pieces
1 tablespoon soy sauce
1 tablespoon rice wine
1 Tablespoon dark seasome oil

Marinate in a bowl 15 minutes or up to 8 hours

3 cloves of garlic finely minced
1 Tablespoon fresh minced Ginger

Combine in a bowl and set aside
1 Pound Mushrooms cut into 1/4 inch slices
4 whole green onions cut into 1 inch slices on the diagonal
1 Bockchoy trimed

Combine in a bowl and set aside

1/4 Cup rice wine

Set aside

1/4 cup chicken stock
2 Tablespoons rice wine
1 Tablespoon soy sauce
1 Tablespoon oyster sauce
1 Tablespoon dark sesame oil
1 Tablespoon cornstarch
1/2 teaspoon sugar
1/4 teaspoon black pepper

Combine in a bowl and set aside.
 
Heat wok on high heat and add 2 Tablespoons Olive Oil swirl the wok.

Brown the beef on all sides about 2 minutes Remove to a plate

Add 1 Tablespoon Olive Oil swirl and allow to heat

Add garlice and ginger allow to turn white about 5 seconds

Add vegtables for 1 minute

Add the 1/4 cup of rice wine stir fry for 2 more minutes

Add the sauce and add return the beef stir until coated and thickened

Serve with or without white rice
