Roasted Parmesan Asparagus
1-tablespoon olive oil
1 ½ pounds very slender asparagus
3 tablespoons balsamic vinegar
Salt and pepper to taste
¼ cup Parmesan cheese curls
Preheat oven to 500 and ovenproof skillet. Remove from oven and place on stove swirl olive oil Roll asparagus for 2 to 3 minutes Salt and pepper Sprinkle vinegar Return to oven for 5 to 7 minutes Remove and scatter Parmesan on top
