Sweet Potatoes
4 Large sweet potatoes peeled and chopped
1/4 Cup Cream
1/2 Cup Butter
1/2 Cup Maple Syrup or your fav
2 Tablespoons Brown Sugar
Boil potatoes for 30 minutes in salted water...drain...set aside and keep warm
1/2 Cup butter medium low, in a small sauce pan, until browned and nutty color...NOT BURNED
Stir in syrup and brown sugar.....turn off the heat
Add cream to the potatoes and mash smooth...should be very soft
Pour in the butter sauce until as much as you want to flavor...serve remainder on the side.
