Swiss Chard
Ingredients:
For the Chard: 3 slices bacon, cut into 1/2-inch pieces 1/2 medium red onion, diced 1 garlic clove, minced 1 large head of swiss chard, washed, and coarsely chopped salt & pepper to taste Instructions: Cook the bacon in a large skillet over medium heat until crisp. Remove the bacon and leave drippings. Add the onion to the pan and saute about 3 minutes. Stir in the garlic about 45 seconds. Add chard and stir occasionally until wilted, 2-3 minutes. Season with salt and pepper. Top with bacon. Serve immediately.
